- 1 container (5.3 ounces) of Siggi's coconut 2% yogurt (or your favorite)
- 1/4 cup granola (we like Purely Elizabeth Pumpkin Cinnamon Granola)
- 1 tablespoon hemp hearts
- 1 tablespoon sprouted pumpkin seeds
- 1 Citriburst finger lime (1 teaspoon of pearls)
- 1/4 cup of cubed pineapple
Enjoy this protein packed superfood parfait for breakfast, or even a time beach snack. First, pick your yogurt style – whether you like Greek, Aussie, Regular Yogurt or our favorite, Icelandic. We love Siggi’s Icelandic yogurt because it has less sugar and more protein than traditional Greek yogurt options – a whole 15 grams of protein are in one little container!
Choosing the yogurt flavor is the fun part. We chose coconut because it’s sweet and creamy flavor pairs well the citrus pop from our CItriburst finger lime pearls. Other yogurt flavors that compliment finger limes are Strawberry, Mixed Berry, Vanilla, and Guava.
Adding crutch to a parfait balances out the creaminess of the yogurt and crisp fruit toppings. Today we piled on our favorite Purely Elizabeth Pumpkin Cinnamon Ancient Grain Granola with organic, millet, and chia – talk about small but mighty! Add some raw shelled hemp hearts – these little gems have a whopping 10 grams of omega 3 and 6. The final dry topping is sprouted pumpkin seeds – these seeds have 7 grams of protein per one ounce – count me in! We also love including chia seeds, dried goji berries, dried honeycomb, and flax seeds to the top of parfaits if you want to switch it up.
I loaded the top of the parfait with pineapple and squeezed our own Citriburst finger limes on top to finish it off with a fresh pop of flavor. Enjoy!
