- 2 slices of your favorite bread, bagel or English Muffin
- 1 ripe Morro Bay avocado
- 4 sprigs fresh dill
- 1/2 cup favorite sprouts
- 1 tablespoon of stone ground mustard
- Salt, pepper and paprika to taste
- 2 soft boiled egg
The best thing about avocado toast is how customizable it is! Cut your bread to your desired thickness, toast it to perfection, spread 1/2 of the avocado on each slice, add the dill, sprouts, one egg* split on each, mustard and seasonings and Yum!
*For a perfect soft boiled egg, bring a large saucepan of water to a boil over medium-high heat. Using a slotted spoon, carefully lower eggs into water one at a time. Cook 6½ minutes, adjusting heat to maintain a gentle boil. Transfer eggs to a bowl of ice water and chill until just slightly warm, about 2 minutes. Gently crack eggs all over and peel, starting from the wider end, which contains the air pocket.
