Finger Lime and Cardamom Raw Granola Bars
- ½ Cup - Dates
- ½ Cup - Old Fashioned Oats
- ½ Cup - Unsweetened Coconut Flakes
- ½ Cup - Nut Butter (Almond or Cashew Recommended)
- ¼ Cup - Honey
- 1 TSP - Cardamom
- 2 TBSP - Chia Seeds
- ½ TSP - Salt
- 6 - Finger Limes
Directions
- Line a loaf tin with parchment paper.
- Pit dates and roughly chop.
- In a large bowl, combine dates, oats, and coconut.
- In a medium bowl, combine nut butter, honey, cardamom, chia seeds, and salt.
- Add the nut butter mixture to a large bowl and stir to combine. To fully incorporate, you may want to use your hands.
- Firmly press into the lined loaf tin and cover with more parchment paper.
- Refrigerate for at least 4 hours.
- When firm, take out of the tin and cut.
- When ready to eat, top with honey or nut butter and finger lime pearls. We suggest one finger lime per bar.
Can be stored in the fridge for up to a week.
