Summer Salad with Finger Lime and Cilantro Vinaigrette
Cilantro Finger Lime Vinaigrette
- 15 - 20 Cilantro Stems with Leaves
- 8 - Finger Limes
- ΒΌ Cup - Olive Oil
- 2 tbsp - Apple Cider Vinegar
- Salt
Salad
- 2 cups - Arugula
- 4 oz - Petite Tomatoes
- Pickled Shallots
- Sunflower Seeds
Directions
- Combine cilantro stems and leaves in a food processor with olive oil and apple cider vinegar.
- Once emulsified, pour into a jar and stir in salt and finger lime pearls.
- Combine salad ingredients on individual plates and pour vinaigrette right before eating.
