Loaded Sweet Potatoes with Finger Limes
Directions
- Preheat the oven to 425 degrees.
- Coat sweet potatoes in olive oil and place on a foil lined baking sheet.
- Bake until tender – about 45 minutes.
- While they are baking, chop avocado, jalapeno, cilantro, and tomatoes. Set aside until ready to serve.
- Let the sweet potatoes cool for 10-15 minutes, then cut in half and pile them high with all the toppings.
