Loaded Sweet Potatoes with Finger Limes

Directions

  1. Preheat the oven to 425 degrees.
  2. Coat sweet potatoes in olive oil and place on a foil lined baking sheet.
  3. Bake until tender – about 45 minutes.
  4. While they are baking, chop avocado, jalapeno, cilantro, and tomatoes. Set aside until ready to serve.
  5. Let the sweet potatoes cool for 10-15 minutes, then cut in half and pile them high with all the toppings.
